To say the weather in our part of the world has been depressing lately would be a total understatement. With the exception of Wednesday, the forecast for the entire week has featured grey clouds, torrential rain, and thunderstorms. Also depressing? A freezer packed so full of ripe bananas that there’s no room for my tub of salty caramel truffle ice cream. This injustice simply will not stand.
There’s clearly not much I can do about the weather. However, being stuck inside with a surplus of bananas lends itself perfectly to some baking. Chances are my hot summer bod (haha it’s fun to pretend) won’t be making its debut any time soon, so I might as well indulge.
I’ve curated a list of ideas for using up my extra bananas and clearing some coveted freezer space. A couple of these are my go-to’s and others made the list based on recommendations from pals who know where it’s at in the kitchen. What are your favourite ways to use your frozen ‘nanners’?
Warm Banana Bread Pudding with Chocolate Chips & Pecans
Honestly, you just read that descriptive heading, so if you need further convincing I’m not sure we’d be friends. This bread pudding comes from the Looney Spoons Collection cookbook and it’s crazy good. It would make an especially amazing addition to any holiday breakfast!
Peanut Butter Cup Smoothie
Carolyn over at Project Navy has an amazing recipe for a peanut butter cup smoothie. I tested this recipe when she first shared it and I’ve been hooked ever since! It’s a great cure for your sweet cravings, and I’m a sucker for the classic PB and chocolate flavour combo. Smoothie perfection!
I love me some good banana pancakes! These ones, from the Just so Tasty blog are some of the best I’ve tested so far. Nothing makes a Sunday morning breakfast cozy and satisfying quite like fluffy, buttery, pancakes topped with local maple syrup!
Banana Blueberry Oat Muffins
My friend Steph recently whipped up these muffins from the Crafted Sparrow blog and she loved them. They also got the thumbs up from her toddler, and since our little dude has recently become blueberry obsessed, I think he’d love them too. They’re next on my list to try, because her recommendations have never let me down!
Banana Bread Muffin Tops
I received the Oh She Glows Everyday Cookbook for my birthday back in May, and I’m slowly working my way through it. I’ve been super impressed with everything I’ve tested so far, and these muffin tops are no exception. They’re flavourful, moist, and full of texture. Plus, they are gluten free, vegan, and contain no added sugar. Which makes it totally OK to eat three back to back. Not that I’ve done that or anything…I’m just saying.
