It’s been a bit of a gloomy week here, and the rainy weather always makes me want to just stay inside and do cozy things. Typically this means lots of cuddles in our jammies, and then sneaking in some baking, a warm bevy, and reading while the little dude is napping.
I honestly believe energy balls might be the perfect snack for mommas! They’re easy to munch on the go, have lots of healthy ingredients, and are so tasty that they feel like a bit of an indulgence. There’s also endless possibilities when it comes to flavours.
Today I experimented and combined three of my fave flavours, coconut, chocolate, and almond! The result was just so unbelievably yummy!

Almond Coconut Brownie Energy Bites
Ingredients:
2 cups Large flake oats
1 cup Almond butter
1/2 cup Ground flax seed
1/2 cup Maple syrup
1/3 cup Semi-sweet chocolate chips
1/4 cup Unsweetened coconut
6 Pitted dates, chopped
1 tbsp Cocoa powder
1 tbsp Qia cereal (chia seeds, hemp seeds, buckwheat combo)
1 tsp Almond extract
1 tsp Vanilla extract
Add all ingredients to a large bowl and mix until very well combined. Then add to food processor to further combine- this step will help the balls get chewy.
Using your hands, grab small pieces of the mixture and form it into balls. Each ball is roughly 1.5 tbsp of the mixture.
Place balls into an airtight container and refrigerate or freeze. Makes approximately 20 balls.
